Have you ever tried the meat of a fresh cacao-bean? Have you ever used pure cacao in a savory dish? If not you should take this opportunity. For my course I retrieve fresh, organic cacao-beans from Bahia, which we will open together so you can experience it’s taste, smell and texture. (Please note that this is subject to availability. The course will take place also in case I can’t have fresh cacao beans. I’ll inform you beforehand.)
Once you arrive at my open-air patio and kitchen I will welcome you with a refreshing drink. We will have an introduction on the world of cacao and chocolate. We will talk about history and health aspects of “the food of gods”, as well as social aspects of cocoa production.
This workshop is not about chocolate and candies. I want to surprise you and show you new culinary horizons. We will create a complete savory menu with cacao pulp, powder and butter.
We won’t use meat or other animal derived products, but only fruits, veggies, legumes, grains, spices and, off course, cacao. And lots of it! 🙂
Finally we will enjoy our creations accompanied by a good bottle of Brazilian wine, beer or more caipirinhas.
COVID-19-update: I’ll keep us all safe! We will be outdoors all the time (but covered from the elements), I have a big fan for extra ventilation and my groups are limited to max 6 people!
